Unfortunately I have to leave you now. So don't do anything silly while I'm not here.

Hi -- I have a few questions -- I am thinking to perhaps use dokuwiki to organize my own personal notes about things that I learn. (1) Does that sound like a decent use case? (2) Can you easily run dokuwiki on your own machine for your own personal use? (3) Does dokuwiki in any way support LaTex or MathJax for math typesetting in the dokuwiki pages?

em: Yes, yes and there is https://www.dokuwiki.org/plugin:mathjax For (2) there is the option to include MicroApache for Windows on the download page, on Linux or Mac the easiest option is to install PHP and use it's built-in webserver, see https://www.dokuwiki.org/php_build-in_webserver

I'm a little nervous about setting up my own webserver but maybe it can be done

If I could maybe set it up on something like NearlyFreeSpeech.net that could be good too.

What I was talking about is not a webserver accessible from the internet but just accessible from your local system. If you want something you can access from the internet, something like NearlyFreeSpeech.NET is probably the better option.
