    tables, yeah. there is a visual editor for tables too, but you won't find advanced spreadsheet featuers (functions etc.)

    i don't know anything about foswiki but i've been admin of a pool of about 100 dokuwiki instances (in farm mode) for a few years with absolutely no problems

    the dokukwiki plugin page/installer has both, they come from all sorts of sources

    the bundled ones and the ones by Andreas Gohr and others in the core team are the "most official" ones, but i don't think there really is a distinction
